Sauce
  1. In a large skillet over medium heat, add in the butter and your chopped onion. Cook until slightly browned.
  2. Add your mushrooms and cook for an additional 2 minutes.
  3. Add garlic and continue cooking for 3 minutes or until the mushrooms and garlic are cooked.
  4. Add the heavy cream. Stir together and cover your pot. Let simmer for about 2 minutes.
  5. Add in parmesan cheese.
Orzo
  1. In a large pot add the broth and bring to a rolling boil. Add in orzo and cook according to box. The liquid should be mostly absorbed.
  2. Add your cooked orzo to the sauce and let simmer for about a minute.

  1. Cook chicken in pan, seasoning with salt, pepper, and adobo.
  2. In large put combine cooked chicken, onion, soup, and water, bring to a boil and simmer for 10 minutes.
  3. Add biscuits to pot by tearing into pieces. Cook for an additional 12 minutes or until biscuits are done.

Yummy Mexican Goulash

Great alternative to tacos.

Ingredients

  • 1 pound ground sirloin
  • 1 finely chopped onion
  • 1 finely chopped small green pepper
  • 1 (10 ounce) can diced tomatoes with Chile peppers
  • 1 can sliced black olives
  • 1 (9 ounce) package frozen corn
  • 1 (8 ounce) package rotini pasta
  • 1/2 cup salsa
  • 2 tablespoons taco seasoning
  • Sour cream, shredded cheddar cheese, and additional salsa for topping

Directions

  1. Brown ground sirloin and drain.  In large skillet combine sirloin, pepper, onion, tomatoes, corn, salsa, and taco seasoning.  Cover and simmer for 10 minutes.
  2. Cook pasta and combine with meat mixture.
  3. Simmer for an additional 10 minutes.
  4. Serve with topping of sour cream, salsa and shredded cheddar cheese.

  1. Brown ground sirloin in skillet and drain grease.
  2. Chop the peppers, zucchini, squash, and onion.
  3. Combine all ingredients into large pot and bring to boil. Don't worry that the sauce seems thick, all the veggies will add the extra liquid that is needed.
  4. Let simmer for as long as possible, but no less than 1 hour. Simmer on the lowest heat. You want the veggies to be a little soft.
